Master stock pork belly; glazed with chili and lime caramel served with carrot and red current spaghetti, pickled fennel and radicchio salad with beetroot emulsion


Mirin glazed steamed tiger prawns; black sesame, shallot and red roe glass noodles served with wasabi cream and crisp wonton

The Main Event

Seared beef tenderloin; with roasted root vegetables, truffled parsnip foam and taro chips with Shiraz jus


Tasmanian salmon fillet; with prawn croquettes, braised witlof, carrot puree and zucchini ribbons, served with a chervil cream sauce

To Finish

Tasting plate; white chocolate and ginger terrine, three textures chocolate torte, cinnamon and star anis strawberries and strawberry sorbet.
